- 0.5 cup finely ground almond flour
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
- Whisk together the eggs and Greek yogurt until smooth (about 2-3 minutes).
- Add baking powder, salt, xanthan gum, and almond flour, then gently fold until just combined.
- Drizzle in the melted butter or coconut oil and mix gently for about 1-2 minutes.
- Pour the batter into the prepared pan and spread evenly. Bake for 40-50 minutes until golden brown and a toothpick comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
