Ingredients

  • 0.5 cup full-fat Greek yogurt
  • 1 tablespoon baking powder
  • 0.25 cup melted butter or coconut oil
  • 0.25 teaspoon salt
  • 0.5 teaspoon xanthan gum or psyllium husk powder
  • 0.5 cup finely ground almond flour

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
  2. Whisk together the eggs and Greek yogurt until smooth (about 2-3 minutes).
  3. Add baking powder, salt, xanthan gum, and almond flour, then gently fold until just combined.
  4. Drizzle in the melted butter or coconut oil and mix gently for about 1-2 minutes.
  5. Pour the batter into the prepared pan and spread evenly. Bake for 40-50 minutes until golden brown and a toothpick comes out clean.
  6. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes
