Description

Ingredients

  • 2 tablespoons olive oil (extra virgin recommended for flavor)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 cups vegetable broth
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1 cup heavy cream (or coconut milk)
  • Fresh basil or parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent (about 3-4 minutes). Then add minced garlic and continue to sauté for another minute.
  2. Stir in crushed tomatoes, vegetable broth, balsamic vinegar, smoked paprika, and sugar. Season with salt and pepper.
  3. Bring to a gentle boil, then reduce heat and let simmer uncovered for about 10-15 minutes.
  4. Blend the soup using an immersion blender until smooth.
  5. Stir in the heavy cream or coconut milk and heat for an additional 2 minutes before serving.
