- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 2 cups vegetable broth
- 1 tablespoon balsamic vinegar
- 1 teaspoon smoked paprika
- 1 teaspoon sugar
- Salt and pepper to taste
- 1 cup heavy cream (or coconut milk)
- Fresh basil or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent (about 3-4 minutes). Then add minced garlic and continue to sauté for another minute.
- Stir in crushed tomatoes, vegetable broth, balsamic vinegar, smoked paprika, and sugar. Season with salt and pepper.
- Bring to a gentle boil, then reduce heat and let simmer uncovered for about 10-15 minutes.
- Blend the soup using an immersion blender until smooth.
- Stir in the heavy cream or coconut milk and heat for an additional 2 minutes before serving.
