Description

A cozy and rich soup that combines the flavors of ground turkey and cheese tortellini in a creamy broth.


Ingredients

Scale
  • 3 tbsp olive oil
  • 1 medium onion, chopped
  • 1 lb ground turkey
  • 1 tbsp Worcestershire sauce
  • 3 garlic cloves, minced
  • 1 1/2 tsp salt
  • 1 1/2 tsp dried parsley
  • 1/4 tsp black pepper
  • 15 oz diced tomatoes
  • 12 oz frozen peas and carrots
  • 8 oz tomato sauce
  • 4 cups chicken broth
  • 4 oz cream cheese, softened
  • 16 oz cheese tortellini

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté for 5 minutes until softened and translucent.
  3. Increase heat to medium-high, add the ground turkey, and cook for 5-7 minutes, breaking it apart until no pink remains.
  4. Stir in minced garlic, Worcestershire sauce, salt, dried parsley, and black pepper, cooking for about 1 minute until fragrant.
  5. Pour in diced tomatoes, tomato sauce, and chicken broth, stirring to combine and bringing to a boil.
  6. Reduce heat to medium-low, cover, and simmer for 20 minutes.
  7. Add frozen peas and carrots, stirring gently for a couple of minutes.
  8. Cube the cream cheese, add to the soup, and stir until melted.
  9. Add frozen cheese tortellini and simmer for 10 minutes until tender.
  10. Serve immediately, optionally topped with fresh parsley.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to a month.
