- 2 cups Blueberries
- 8 ounces Cream Cheese or Yogurt
- 1/4 cup Maple Syrup
- 1 pre-made pie crust
Instructions
- Preheat your oven to 375°F (190°C). Prep a 9-inch pie dish by laying out your pie crust and letting it come to room temperature.
- Combine the chia seeds and 1 cup of blueberries in a medium bowl. Let them sit for about 15 minutes.
- Blend the cream cheese or yogurt with maple syrup until smooth, about 2-3 minutes.
- Mix the chia mixture into the creamy filling and fold in the remaining blueberries gently.
- Pour the blueberry mixture into the prepared pie crust, spreading it evenly.
- Bake for 25-30 minutes until set and golden.
- Allow the pie to cool for at least an hour before slicing.
Notes
For best results, allow blueberries to dry completely if using fresh ones. Store any leftovers covered in the fridge for up to 3 days.
