Ingredients

  • 1/2 cup unsweetened applesauce
  • 1/2 cup granulated sugar or coconut sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. Whisk together the Greek yogurt, applesauce, sugar, eggs, and vanilla extract until smooth.
  3. In another bowl, whisk the flour, cocoa powder, baking powder, and salt.
  4. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. If using, fold in the chocolate chips gently.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 25-30 minutes. Check for doneness with a toothpick.
  8. Allow to cool in the pan for 10 minutes, then transfer to a wire rack and cut into squares.
