- 1/2 cup unsweetened applesauce
- 1/2 cup granulated sugar or coconut sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- Whisk together the Greek yogurt, applesauce, sugar, eggs, and vanilla extract until smooth.
- In another bowl, whisk the flour, cocoa powder, baking powder, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- If using, fold in the chocolate chips gently.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes. Check for doneness with a toothpick.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack and cut into squares.
