Description

Sweet and chewy Date Triangles with a buttery oat crust, perfect for snacks or desserts.

Ingredients

Scale
  • 2 1/2 cups dried, pitted dates, chopped
  • 1/4 cup brown sugar (or coconut sugar)
  • 1 cup water
  • 1/2 freshly squeezed lemon juice
  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1 cup brown sugar (or coconut sugar)
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 3/4 cup cold salted butter, diced

Instructions

  1. Preheat the oven to 175°C (350°F) and grease a 20×20 cm (8×8 inch) baking dish.
  2. In a saucepan, combine the chopped dates, water, and 1/4 cup brown sugar over medium heat. Bring to a boil and then simmer for 8-10 minutes until thickened. Stir in lemon juice.
  3. In a large mixing bowl, combine rolled oats, all-purpose flour, 1 cup brown sugar, baking powder, and salt. Add cold butter and mix until crumbly.
  4. Press 50-60% of the oat mixture evenly into the pan, spread the date mixture over it, then sprinkle the remaining oat mixture on top. Press down gently.
  5. Bake for 45-50 minutes or until the top is golden brown. Allow to cool completely before slicing into triangles.
