Description
Sweet and chewy Date Triangles with a buttery oat crust, perfect for snacks or desserts.

- 2 1/2 cups dried, pitted dates, chopped
- 1/4 cup brown sugar (or coconut sugar)
- 1 cup water
- 1/2 freshly squeezed lemon juice
- 1 1/2 cups rolled oats
- 1 cup all-purpose flour (or gluten-free flour)
- 1 cup brown sugar (or coconut sugar)
- 1/2 teaspoon baking powder
- Pinch of salt
- 3/4 cup cold salted butter, diced
Instructions
- Preheat the oven to 175°C (350°F) and grease a 20×20 cm (8×8 inch) baking dish.
- In a saucepan, combine the chopped dates, water, and 1/4 cup brown sugar over medium heat. Bring to a boil and then simmer for 8-10 minutes until thickened. Stir in lemon juice.
- In a large mixing bowl, combine rolled oats, all-purpose flour, 1 cup brown sugar, baking powder, and salt. Add cold butter and mix until crumbly.
- Press 50-60% of the oat mixture evenly into the pan, spread the date mixture over it, then sprinkle the remaining oat mixture on top. Press down gently.
- Bake for 45-50 minutes or until the top is golden brown. Allow to cool completely before slicing into triangles.
Notes
Store leftover Date Triangles in an airtight container for up to 3 days at room temperature or refrigerate for up to a week. They freeze well for up to a month.
