- 1 cup chocolate graham crackers, finely ground
- 6 tablespoons melted butter
- 1/4 cup sugar
- 1 teaspoon unflavored gelatin
- 2 tablespoons cold water
- 4 ounces white chocolate chips
- 2 1/2 tablespoons milk, half and half or cream
- 1 tablespoon powdered sugar
- 1 cup heavy whipping cream
- 3–4 drops pure peppermint oil
- 1/4 cup heavy whipping cream
- 3 1/2 ounces bittersweet or dark chocolate
- 2 teaspoons light corn syrup
- 2 tablespoons very warm water
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the finely ground chocolate graham crackers, melted butter, and sugar. Press this mixture evenly into the bottom and sides of a 9.5″ tart pan. Bake for 10 minutes, then allow it to cool on a wire rack for at least 15 minutes.
- Sprinkle the unflavored gelatin over the cold water and allow it to bloom for 5 minutes. Microwave the mixture for 15-30 seconds until just dissolved.
- Melt the white chocolate in a microwave-safe bowl, heating it for 30 seconds at a time. Heat the milk until just steaming, then whisk it into the melted white chocolate. Add in the bloomed gelatin and peppermint oil, whisking until fully incorporated. Allow this mixture to cool to about 85°F.
- In a separate bowl, whip the heavy cream and powdered sugar until medium-stiff peaks form. Fold in a third of the whipped cream to the chocolate mixture, then fold in the remaining whipped cream until just combined.
- Spoon the mousse filling into the cooled tart shell and smooth the top. Chill in the refrigerator for a few hours or until completely set (ideally overnight).
- For the glaze, bring the cream to a boil and remove from heat. Stir in the dark chocolate until smooth, then add corn syrup and warm water.
- Pour the glaze over the tart, tilting to coat the top completely. Let stand until the glaze is set, about 1 hour.
- Serve chilled, best on the day it’s finished.
Notes
Use high-quality chocolate for the best flavor; this tart can be made up to three days in advance.
