- 1 cup dandelion petals (washed and stems removed)
- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/2 cup vegetable oil

- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease a muffin tin with non-stick spray or line it with paper liners.
- Mix the flour, sugar, baking powder, and salt in a large bowl until well combined.
- Prepare the wet ingredients in a separate bowl by whisking together the milk, vegetable oil, eggs, and vanilla extract until frothy.
- Combine the wet ingredients into the dry mixture and gently mix with a spatula until just combined.
- Add the dandelion petals gently and fold them into the mix.
- Fill the muffin cups about 2/3 full with the batter.
- Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
- Cool in the muffin tin for 5 minutes before transferring to a wire rack.
