Ingredients

  • 1 cup dandelion petals (washed and stems removed)
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin with non-stick spray or line it with paper liners.
  2. Mix the flour, sugar, baking powder, and salt in a large bowl until well combined.
  3. Prepare the wet ingredients in a separate bowl by whisking together the milk, vegetable oil, eggs, and vanilla extract until frothy.
  4. Combine the wet ingredients into the dry mixture and gently mix with a spatula until just combined.
  5. Add the dandelion petals gently and fold them into the mix.
  6. Fill the muffin cups about 2/3 full with the batter.
