Ingredients

- 1 cup raw cashew pieces
- 2 cups hot water
- 1 can full-fat coconut cream
- 1/2 Tbsp vanilla extract
- 1/4 tsp salt
- 1/2 cup coconut sugar
- 1/4 cup water
- 4 oz dark chocolate (at least 70% cocoa)
Instructions
- Soak the cashews in a bowl with 2 cups of hot water for at least one hour.
- Blend the soaked cashews along with the soaking water on high until smooth.
- Combine the coconut cream, vanilla extract, and salt in the blender and blend until creamy.
- Prepare the chocolate mixture by combining coconut sugar and 1/4 cup water in a saucepan, warming over medium heat until dissolved, and adding dark chocolate until melted.
- Blend the melted chocolate mixture into the cashew cream until thoroughly incorporated.
- Churn the mixture in an ice cream maker according to manufacturer’s instructions for about 20-25 minutes until soft-serve consistency.
- Freeze in a loaf pan covered for a firmer texture or serve immediately.
Notes
For the smoothest ice cream, use a high-speed blender. This ice cream can be stored in the freezer for up to two weeks.
