Description

A vibrant and flavorful salad featuring fluffy couscous, tart cranberries, crunchy almonds, and warm spices, perfect for any occasion.


Ingredients

Scale
  • 1 cup couscous
  • 1 cup dried cranberries
  • 1 cup slivered almonds
  • 1 cup crumbled feta cheese
  • Juice of 1 fresh lemon
  • 3 tbsp extra virgin olive oil
  • 2 tsp curry powder
  • Salt & pepper to taste

Instructions

  1. Bring 1 cup of water to a boil and add 1 cup of couscous. Remove from heat, cover, and let sit for about 5 minutes. Fluff with a fork and let cool.
  2. In a small bowl, whisk together 3 tablespoons of olive oil, the juice of 1 lemon, 2 teaspoons of curry powder, and a pinch of salt and pepper. Let sit for about 5 minutes.
  3. In a large bowl, combine the cooled couscous, 1 cup of dried cranberries, 1 cup of slivered almonds, and 1 cup of crumbled feta.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Serve chilled or at room temperature, allowing flavors to meld.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. The flavors develop even more after a day!
