A vibrant and flavorful salad featuring fluffy couscous, tart cranberries, crunchy almonds, and warm spices, perfect for any occasion.
Ingredients

- 1 cup couscous
- 1 cup dried cranberries
- 1 cup slivered almonds
- 1 cup crumbled feta cheese
- Juice of 1 fresh lemon
- 3 tbsp extra virgin olive oil
- 2 tsp curry powder
- Salt & pepper to taste
Instructions
- Bring 1 cup of water to a boil and add 1 cup of couscous. Remove from heat, cover, and let sit for about 5 minutes. Fluff with a fork and let cool.
- In a small bowl, whisk together 3 tablespoons of olive oil, the juice of 1 lemon, 2 teaspoons of curry powder, and a pinch of salt and pepper. Let sit for about 5 minutes.
- In a large bowl, combine the cooled couscous, 1 cup of dried cranberries, 1 cup of slivered almonds, and 1 cup of crumbled feta.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve chilled or at room temperature, allowing flavors to meld.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. The flavors develop even more after a day!
