Description

Delicious raspberry crumble cookies featuring a soft chewy center topped with a rich crumble, perfect for family gatherings or cozy moments.


Ingredients

  • 1 cup of unsalted butter, room temperature
  • 1 cup of granulated sugar
  • 1 large egg
  • 1 teaspoon of vanilla extract
  • 2 cups of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 1/2 cups of fresh raspberries
  • 1 cup of rolled oats
  • 3/4 cup of brown sugar, packed
  • 1 teaspoon of cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2 minutes.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Gently fold in the fresh raspberries.
  6. In a separate bowl, mix together the oats, brown sugar, and cinnamon. Then add melted butter, mixing until crumbly.
  7. On a lined baking sheet, drop tablespoonfuls of cookie dough and top each with a generous spoonful of crumble mixture.
  8. Bake for 15-18 minutes or until the edges are golden brown.
  9. Allow cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
