- 1 cup peanut butter (creamy)
- 1 cup sugar (granulated)
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup Reese’s peanut butter cups (chopped)
- 1/2 cup peanut butter chips
- 1/2 cup smooth peanut butter (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the peanut butter, sugar, egg, vanilla extract, baking soda, and salt. Mix until smooth (1-2 minutes).
- Gently fold in the chopped Reese’s peanut butter cups.
- Scoop rounded portions of dough onto a baking sheet lined with parchment paper, spacing about 2 inches apart. Flatten slightly if desired.
- Bake for about 10-12 minutes or until edges are golden brown.
- Cool on baking sheet for about 5 minutes.
- Top each cookie with a dollop of smooth peanut butter and optionally an extra Reese’s cup.
- Let cookies sit until the peanut butter hardens slightly before serving.
Notes
Store cookies in an airtight container at room temperature for up to 1 week or in the refrigerator for 2-3 weeks. Dough can be frozen for later use.
