Description

Deliciously chewy cookies incorporating creamy peanut butter and chunks of Reese’s Peanut Butter Cups, perfect for satisfying your sweet tooth.


Ingredients

  • 1 cup peanut butter (creamy)
  • 1 cup sugar (granulated)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Reese’s peanut butter cups (chopped)
  • 1/2 cup peanut butter chips
  • 1/2 cup smooth peanut butter (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the peanut butter, sugar, egg, vanilla extract, baking soda, and salt. Mix until smooth (1-2 minutes).
  3. Gently fold in the chopped Reese’s peanut butter cups.
  4. Scoop rounded portions of dough onto a baking sheet lined with parchment paper, spacing about 2 inches apart. Flatten slightly if desired.
  5. Bake for about 10-12 minutes or until edges are golden brown.
  6. Cool on baking sheet for about 5 minutes.
  7. Top each cookie with a dollop of smooth peanut butter and optionally an extra Reese’s cup.
  8. Let cookies sit until the peanut butter hardens slightly before serving.

Notes

Store cookies in an airtight container at room temperature for up to 1 week or in the refrigerator for 2-3 weeks. Dough can be frozen for later use.
