Description

A hearty and creamy soup made with Italian sausage, tortellini, and fresh spinach, perfect for chilly days.


Ingredients

  • 1 lb Italian sausage (browned & drained)
  • 2 (15 oz) cans Italian diced tomatoes
  • 4 cups vegetable or chicken broth (low-sodium)
  • 8 oz cream cheese (cubed, softened)
  • 1 (20 oz) bag frozen cheese tortellini
  • 34 cups fresh spinach

Instructions

  1. Brown the Italian sausage in a skillet over medium heat until fully cooked, then drain the fat.
  2. In the slow cooker, combine the cooked sausage, broth, diced tomatoes, and cream cheese. Stir to combine.
  3. Set the crockpot to LOW and cook for about 4 hours.
  4. After 4 hours, stir in the frozen tortellini and fresh spinach, and cook for an additional 30 minutes.
  5. Ladle the soup into bowls and enjoy!

Notes

Cream cheese should be at room temperature for the best consistency. Stir occasionally while cooking if you are able.
