A hearty and creamy soup made with Italian sausage, tortellini, and fresh spinach, perfect for chilly days.

- 1 lb Italian sausage (browned & drained)
- 2 (15 oz) cans Italian diced tomatoes
- 4 cups vegetable or chicken broth (low-sodium)
- 8 oz cream cheese (cubed, softened)
- 1 (20 oz) bag frozen cheese tortellini
- 3–4 cups fresh spinach
Instructions
- Brown the Italian sausage in a skillet over medium heat until fully cooked, then drain the fat.
- In the slow cooker, combine the cooked sausage, broth, diced tomatoes, and cream cheese. Stir to combine.
- Set the crockpot to LOW and cook for about 4 hours.
- After 4 hours, stir in the frozen tortellini and fresh spinach, and cook for an additional 30 minutes.
- Ladle the soup into bowls and enjoy!
Notes
Cream cheese should be at room temperature for the best consistency. Stir occasionally while cooking if you are able.
