Description

A simple and hearty meal featuring tender slow-cooked chicken with tzatziki served in fluffy pita bread.


Ingredients

  • Boneless skinless chicken thighs or breasts
  • Full-fat plain Greek yogurt
  • Fresh cucumber
  • Garlic
  • Lemon juice
  • Dried oregano
  • Dried thyme
  • Salt
  • Black pepper
  • Pita bread
  • Extra virgin olive oil

Instructions

  1. Season the chicken with salt, pepper, oregano, and thyme, then drizzle with olive oil and mix well.
  2. Cook on low for 6-8 hours or high for 3-4 hours until the chicken shreds easily.
  3. Make the tzatziki by grating cucumber, mixing with yogurt, minced garlic, lemon juice, olive oil, and seasoning; refrigerate.
  4. Warm the pita bread in the oven for 5-10 minutes at 350°F (175°C).
  5. Assemble by layering shredded chicken into warmed pitas and adding tzatziki and toppings.

Notes

Let the tzatziki chill for better flavor. Store leftovers in an airtight container in the fridge for up to 3 days.
