Description

A warm and creamy chicken corn chowder made effortlessly in a crockpot, perfect for chilly evenings and family gatherings.


Ingredients

  • 1 pound chicken breasts, cooked and shredded
  • 3 cups corn (fresh, frozen, or canned)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups potatoes, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • Optional toppings: crispy bacon, shredded cheese, sour cream

Instructions

  1. In your crockpot, combine the shredded chicken, corn, diced onion, minced garlic, diced potatoes, and chicken broth.
  2. Sprinkle in the salt, pepper, and thyme, and give it a gentle stir.
  3. Set your crockpot to low for 6-8 hours or high for 3-4 hours until the potatoes are tender but not mushy.
  4. In the last 30 minutes of cooking, stir in the heavy cream.
  5. Ladle the chowder into bowls and serve warm with your choice of toppings.

Notes

For enhanced flavor, sauté onions and garlic in butter before adding them to the crockpot.
