An easy slow cooker meal featuring juicy chicken breasts smothered in creamy stuffing with herbs and vegetables. Perfect for busy weeknights!

- 2 lbs (900g) boneless, skinless chicken breasts
- 1 (6 oz) box stufafing mix (like Stove Top)
- 1 (10.5 oz) can cream of chicken soup
- 1 (10.5 oz) can cream of mushroom soup
- 1 cup chicken broth
- 1 cup sour cream
- 1 small onion, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 tsp poultry seasoning
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Prep: Spray crockpot with non-stick cooking spray. Place chicken breasts in bottom.
- Veggies: Sprinkle diced onion, celery, and garlic over chicken.
- Sauce: In a bowl, mix both soups, sour cream, chicken broth, poultry seasoning, pepper and salt. Pour over chicken.
- Stuffing: Sprinkle dry stuffing mix evenly over the top (do not stir).
- Cook: Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken reaches 165°F (74°C).
- Serve: Fluff stuffing lightly with fork. Garnish with parsley before serving.
Notes
- For extra flavor, use herb-seasoned stuffing mix.
- Add 1 cup frozen peas or carrots with the other vegetables.
- Leftovers keep refrigerated for 3 days (reheat with splash of broth).
- For crispy topping: Transfer to oven-safe dish and broil 2-3 minutes before serving.
