  • 2 lbs (900g) boneless, skinless chicken breasts
  • 1 (6 oz) box stufafing mix (like Stove Top)
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 small onion, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 tsp poultry seasoning
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Prep: Spray crockpot with non-stick cooking spray. Place chicken breasts in bottom.
  2. Veggies: Sprinkle diced onion, celery, and garlic over chicken.
  3. Sauce: In a bowl, mix both soups, sour cream, chicken broth, poultry seasoning, pepper and salt. Pour over chicken.
  4. Stuffing: Sprinkle dry stuffing mix evenly over the top (do not stir).
  5. Cook: Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken reaches 165°F (74°C).
  6. Serve: Fluff stuffing lightly with fork. Garnish with parsley before serving.

Notes

  • For extra flavor, use herb-seasoned stuffing mix.
  • Add 1 cup frozen peas or carrots with the other vegetables.
  • Leftovers keep refrigerated for 3 days (reheat with splash of broth).
  • For crispy topping: Transfer to oven-safe dish and broil 2-3 minutes before serving.
