Description

A comforting and flavorful Southern dish made with black-eyed peas, collard greens, and smoked sausage, perfect for family gatherings.

Ingredients

Scale
  • 4 cans Black-Eyed Peas (drained and rinsed)
  • 2 12 oz packets Frozen Chopped Collard Greens
  • 14 oz Smoked Sausage (chopped)
  • 4 cups Chicken or Vegetable Broth
  • 1 tsp Salt
  • 1 tsp Garlic Powder
  • 1 tsp Pepper
  • 1 tsp Onion Powder
  • 1/2 tsp Paprika

Instructions

  1. Chop your smoked sausage into bite-sized pieces.
  2. Place the chopped sausage, drained black-eyed peas, and frozen collard greens into your crockpot.
  3. Pour in the chicken or vegetable broth and sprinkle the salt, garlic powder, pepper, onion powder, and paprika over the top. Stir gently to combine.
  4. Cover the crockpot and set it to high for 5-6 hours, stirring halfway through if possible.
  5. Stir well once cooking time is up. If too thick, add water until the desired consistency is reached.
  6. Ladle into bowls and enjoy!

Notes

For added flavor, consider sautéing the sausage first. Storage: Refrigerate leftovers in an airtight container for up to 5 days.
