- 4 cans Black-Eyed Peas (drained and rinsed)
- 2 12 oz packets Frozen Chopped Collard Greens
- 14 oz Smoked Sausage (chopped)
- 4 cups Chicken or Vegetable Broth
- 1 tsp Salt
- 1 tsp Garlic Powder
- 1 tsp Pepper
- 1 tsp Onion Powder
- 1/2 tsp Paprika
Instructions
- Chop your smoked sausage into bite-sized pieces.
- Place the chopped sausage, drained black-eyed peas, and frozen collard greens into your crockpot.
- Pour in the chicken or vegetable broth and sprinkle the salt, garlic powder, pepper, onion powder, and paprika over the top. Stir gently to combine.
- Cover the crockpot and set it to high for 5-6 hours, stirring halfway through if possible.
- Stir well once cooking time is up. If too thick, add water until the desired consistency is reached.
- Ladle into bowls and enjoy!
Notes
For added flavor, consider sautéing the sausage first. Storage: Refrigerate leftovers in an airtight container for up to 5 days.
