Description

A cozy and hearty soup combining tender beans and rich ham flavors, perfect for chilly autumn days.


Ingredients

  • 1 ham bone (or diced leftover ham)
  • 2 cups white beans (soaked overnight)
  • 4 cups low-sodium chicken broth
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Place the ham bone in the bottom of the crockpot.
  2. Add the soaked beans and chicken broth over the ham bone.
  3. Add the chopped onion, sliced carrots, sliced celery, minced garlic, thyme, bay leaf, salt, and pepper.
  4. Stir to combine all ingredients.
  5. Cover and cook on low for 8-10 hours or until beans are tender.
  6. Remove the ham bone, shred any meat left on the bone, and return it to the soup.
  7. Serve hot, optionally garnished with fresh thyme.

Notes

Use high-quality, low-sodium chicken broth for a more robust flavor. If in a hurry, canned beans can be used; rinse well before adding.
