Ingredients

- 1 ham bone (or diced leftover ham)
- 2 cups white beans (soaked overnight)
- 4 cups low-sodium chicken broth
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Place the ham bone in the bottom of the crockpot.
- Add the soaked beans and chicken broth over the ham bone.
- Add the chopped onion, sliced carrots, sliced celery, minced garlic, thyme, bay leaf, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 8-10 hours or until beans are tender.
- Remove the ham bone, shred any meat left on the bone, and return it to the soup.
- Serve hot, optionally garnished with fresh thyme.
Notes
Use high-quality, low-sodium chicken broth for a more robust flavor. If in a hurry, canned beans can be used; rinse well before adding.
