Description

A comforting and creamy Cajun chicken pasta dish made effortlessly in a crock pot, combining tender chicken with rich spices and creamy sauce.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes with juices
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • 12 oz penne pasta
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, drizzle the chicken breasts with olive oil. Sprinkle the Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper on top. Use your hands to rub the spices thoroughly into the chicken.
  2. Heat a skillet over medium-high heat. Sear the chicken for 2–3 minutes on each side until it’s golden brown.
  3. Place the seared chicken in the crock pot. Layer it with the sliced bell peppers, onion, and minced garlic.
  4. Pour in the diced tomatoes (with juices) and the chicken broth. Give everything a gentle stir to combine.
  5. Cover the crock pot and set it on low for 4–5 hours or high for 2–3 hours.
  6. After cooking, remove the chicken and shred it with two forks. Return the shredded chicken to the pot.
  7. Stir in the heavy cream and grated Parmesan cheese until the mixture is smooth and creamy.
  8. In a separate pot, cook the penne pasta according to package instructions until al dente. Drain and add to the slow cooker.
  9. Stir everything to combine and let it simmer on low for an additional 15–20 minutes.
  10. Garnish with fresh parsley and enjoy your delicious, creamy pasta!

Notes

All ingredients are better at room temperature. Store leftovers in an airtight container in the fridge for 3-4 days.
