- 1 smoked turkey leg
- 1 tablespoon salt
- 6–8 cups water
Instructions
- Sort through the dried black-eyed peas to remove any stones or debris, rinse them under cold water, and soak them overnight or for at least 2 hours.
- Lay the smoked turkey leg at the bottom of your slow cooker.
- Pour the sorted and rinsed black-eyed peas on top of the turkey leg, ensuring they’re evenly spread.
- Sprinkle 1 tablespoon of salt over the beans and turkey.
- Fill the slow cooker with enough water to cover the beans by about 1 inch (typically 6 to 8 cups).
- Cover and cook on low for 8-10 hours until the beans are tender and creamy.
- Remove the turkey leg, pull off any meat, and stir it back into the beans. Taste and adjust seasoning as needed.
Notes
For added flavor, consider using garlic, onions, or bay leaves. Adjust salt based on taste preferences.
