Delightful and crispy dumplings filled with mixed vegetables, enveloped in airy rice paper wraps.
Ingredients

- Rice Paper Wraps
- 2 cups Mixed Vegetables (carrots, bell peppers, cabbage, mushrooms)
- 2 tablespoons Soy Sauce
- 1 tablespoon Minced Garlic
- 1 tablespoon Grated Ginger
- Salt and Pepper, to taste
- 1/4 cup Oil for Frying (canola or peanut oil)
Instructions
- Heat about 2 tablespoons of oil in a pan over medium heat.
- Add minced garlic and grated ginger, sauté for about 1 minute.
- Toss in mixed vegetables, soy sauce, salt, and pepper; cook for 5-7 minutes.
- Soak rice paper wraps in warm water for 10 seconds until pliable.
- Assemble dumplings with vegetable filling, folding and sealing tightly.
- Heat 1/4 cup oil in a frying pan and fry dumplings for 3-4 minutes on each side.
- Serve hot with dipping sauces like sweet chili or soy sauce.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. These dumplings can also be frozen before frying.
