  • 1 cup finely chopped broccoli
  • ½ cup diced red bell pepper
  • ¼ cup chopped green onions
  • 2 garlic cloves, minced
  • 1 tbsp grated ginger
  • ½ cup breadcrumbs (or panko for extra crunch)
  • 2 tbsp cornstarch or arrowroot powder
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp sriracha (optional)
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Oil for frying (or baking)

Instructions

  1. Prep Tofu: Press tofu for 15 mins to remove excess water. Crumble into bowl.
  2. Mix Ingredients: Add all vegetables, garlic, ginger, breadcrumbs, cornstarch, and seasonings to tofu. Mix well.
  3. Form Patties: Shape mixture into 8 equal patties (about ½-inch thick). Chill for 15 mins to firm up.
  4. Cook: Heat oil in skillet over medium heat. Cook patties 4-5 mins per side until golden brown and crispy.

  6. Serve: Enjoy in buns with sauce, over salads, or with dipping sauces.

Notes

  • Gluten-free option: Use gluten-free breadcrumbs and tamari
  • Extra crisp: Double coat with breadcrumbs before frying
  • Make ahead: Freeze uncooked patties between parchment paper
  • Flavor variations: Add 1 tsp curry powder or smoked paprika
  • Binding tip: If mixture is too wet, add more breadcrumbs
