14 oz (400g) extra-firm tofu, pressed and crumbled
1 cup grated carrots
1 cup finely chopped broccoli
½ cup diced red bell pepper
¼ cup chopped green onions
2 garlic cloves, minced
1 tbsp grated ginger
½ cup breadcrumbs (or panko for extra crunch)
2 tbsp cornstarch or arrowroot powder
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp sriracha (optional)
1 tsp onion powder
½ tsp salt
¼ tsp black pepper

Instructions
Prep Tofu: Press tofu for 15 mins to remove excess water. Crumble into bowl.
Mix Ingredients: Add all vegetables, garlic, ginger, breadcrumbs, cornstarch, and seasonings to tofu. Mix well.
Form Patties: Shape mixture into 8 equal patties (about ½-inch thick). Chill for 15 mins to firm up.
Cook: Heat oil in skillet over medium heat. Cook patties 4-5 mins per side until golden brown and crispy.
Alternative Baking: For healthier version, bake at 400°F (200°C) for 20 mins, flipping halfway.
