Instructions

  1. Marinate the wings: In a sizable dish or zip-top bag, toss the chicken wings with fish sauce, ensuring every wing is coated. Let them marinate for 20-30 minutes.
  2. Prepare for cooking: After marinating, pat the wings dry with paper towels and sprinkle with pepper if using. Coat each wing in rice flour, shaking off excess.
  3. Fry the wings:
    • Shallow Frying: Heat about ½ inch of oil in a skillet over medium heat and fry wings for about 4 minutes on each side.
    • Deep Frying: Heat oil to 375°F (190°C) and fry wings in batches for about 4-5 minutes until golden.
    • Air Frying: Spray or brush wings with oil, then air fry at 400°F (200°C) for 12-15 minutes.
  4. Serve the wings hot, optionally paired with sweet chili sauce on the side.
