- 1 lb shrimp or other protein of your choice
- 3 cups bean sprouts
- 3 large eggs
- 1 1/2 teaspoons fish sauce
- 12 stalks garlic chives, chopped into 1-inch pieces
- 1 cup roasted cashews
- Julienned red pepper (optional)
- Chopped cilantro (optional)
- 6 lime wedges
- 9 oz pressed tofu, cut into small cubes

- Prepare the crispy noodles: Follow your trusted recipe for the mee krob crispy noodles. Aim for a golden-brown color and a satisfying crunch.
- Beat the eggs: In a bowl, whisk together the eggs and fish sauce. Heat a non-stick skillet over medium heat, add a smear of oil, and pour in a portion of the egg mixture. Swirl to create a thin, crepe-like layer. Cook until set, then cool before cutting into thin ribbon-like strips.
- Cook the shrimp: Heat a wok over high heat. Add oil, then toss in your shrimp. Sauté until they’re pink and opaque, which usually takes 2-3 minutes. Cook in batches to avoid overcrowding.
- Sauté the tofu: In the same wok, add the pressed tofu cubes and sauté until golden brown and heated through, about 4-5 minutes.
