Description

Deliciously crispy and loaded potato bites that are perfect for any gathering, combining comfort and customization in every bite.


Ingredients

  • Medium-sized russet or Yukon gold potatoes
  • Unsalted room-temperature butter
  • High-quality extra virgin olive oil
  • Shredded sharp cheddar cheese
  • Cooked and crumbled bacon (or turkey bacon)
  • Freshly chopped chives
  • Sour cream (or Greek yogurt as a healthy alternative)
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the potatoes thoroughly. Place chopsticks beside each potato while slicing to prevent cutting through completely.
  3. Make thin, even slices about ¼ inch apart.
  4. In a small bowl, mix room temperature butter with olive oil, then brush generously over the potatoes.
  5. Season the potatoes with salt and pepper.
  6. Place the potatoes on a baking sheet lined with parchment paper and bake for 45 minutes, rotating halfway.
  7. After 30 minutes, remove from oven and sprinkle with cheese and bacon, returning to bake for an additional 10-15 minutes until cheese is bubbly.
  8. Garnish with fresh chives and a dollop of sour cream before serving.

Notes

For extra crispiness, broil the potatoes for the last 2-3 minutes of baking. Store leftovers in the fridge for up to 3 days.
