Ingredients
- Medium-sized russet or Yukon gold potatoes
- Unsalted room-temperature butter
- High-quality extra virgin olive oil
- Shredded sharp cheddar cheese
- Cooked and crumbled bacon (or turkey bacon)
- Freshly chopped chives
- Sour cream (or Greek yogurt as a healthy alternative)
- Salt & pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and dry the potatoes thoroughly. Place chopsticks beside each potato while slicing to prevent cutting through completely.
- Make thin, even slices about ¼ inch apart.
- In a small bowl, mix room temperature butter with olive oil, then brush generously over the potatoes.
- Season the potatoes with salt and pepper.
- Place the potatoes on a baking sheet lined with parchment paper and bake for 45 minutes, rotating halfway.
- After 30 minutes, remove from oven and sprinkle with cheese and bacon, returning to bake for an additional 10-15 minutes until cheese is bubbly.
- Garnish with fresh chives and a dollop of sour cream before serving.
Notes
For extra crispiness, broil the potatoes for the last 2-3 minutes of baking. Store leftovers in the fridge for up to 3 days.
