- 1 head garlic, minced
- 600g wild rainbow trout fillet (or any other fish), cut into 1-inch chunks
- A few sprigs cilantro or green onion, chopped (optional, for garnishing)
- Rice for serving
- 3 Tbsp fish sauce
- 3 Tbsp lime juice
- 1 Tbsp sugar
- 1/4 to 1/2 teaspoon roasted chili flakes, to taste
- 1 small shallot, finely sliced
- Frying oil (vegetable or canola oil)
Instructions
- Make the sauce by mixing together fish sauce, lime juice, sugar, and roasted chili flakes in a bowl until the sugar dissolves. Set aside.
- Prepare the garlic by filling a wok or large pot with 2 inches of frying oil and heating it to 250°F (120°C). Add minced garlic and fry until golden brown. Remove when just golden.
- Fry the fish by increasing oil temperature to 400°F (200°C), adding fish in batches, and frying for about 2 minutes until golden and firm.
- Drain the fish on paper towels, then arrange on a platter. Drizzle with sauce, sprinkle with crispy garlic and cilantro or green onions, and serve with rice.

Notes
Store leftovers in the fridge for up to 2 days. Re-fry garlic for crunch when reheating.
