- 3 large heads shallots
- A pinch of salt
- Frying oil, as needed
Instructions
- Slice the shallots evenly, crosswise, into 1/16-inch thick pieces and place them in a bowl.
- Add a pinch of salt and toss to mix. Let them sit for about 10 minutes.
- Spread the shallots on a paper towel-lined plate and press another paper towel on top to absorb any excess moisture.
- Prepare a plate or baking sheet lined with a double layer of paper towel to drain the finished shallots.
- Heat enough frying oil over medium heat in a wok or pot.
- Add the remaining shallots once the oil is ready and fry for about 5-8 minutes or until golden brown.
- Scoop them out with a mesh skimmer and allow them to drain on the prepared plate.
- Allow the shallots to cool completely before using.
Notes
Store crispy fried shallots in an airtight container at room temperature for up to 2-3 weeks.
