Description

Transform humble shallots into a crunchy topping that elevates any dish with flavor and texture.


Ingredients

Scale
  • 3 large heads shallots
  • A pinch of salt
  • Frying oil, as needed

Instructions

  1. Slice the shallots evenly, crosswise, into 1/16-inch thick pieces and place them in a bowl.
  2. Add a pinch of salt and toss to mix. Let them sit for about 10 minutes.
  3. Spread the shallots on a paper towel-lined plate and press another paper towel on top to absorb any excess moisture.
  4. Prepare a plate or baking sheet lined with a double layer of paper towel to drain the finished shallots.
  5. Heat enough frying oil over medium heat in a wok or pot.
  6. Add the remaining shallots once the oil is ready and fry for about 5-8 minutes or until golden brown.
  7. Scoop them out with a mesh skimmer and allow them to drain on the prepared plate.
  8. Allow the shallots to cool completely before using.

Notes

Store crispy fried shallots in an airtight container at room temperature for up to 2-3 weeks.
