- 2 teaspoons sugar
- 0.165 pounds butterfly pea flowers
- 1 liter oil
Instructions
- Pour tempura flour, salt, and sugar into a mixing bowl.
- Add cold water gradually while stirring with a spoon until smooth.
- Coat the butterfly pea flowers in the batter, ensuring each flower is well-coated.
- In a pan over medium-high heat, pour in 1 liter of oil.
- Wait until the oil starts to bubble (about 350°F/175°C).
- Drop the flowers into the pan, about 15-20 flowers at a time.
- Fry for 2-3 minutes, flipping frequently to cook evenly.
- Once golden and crispy, transfer to a serving dish lined with paper towels.
- Serve immediately, preferably with Thai sweet chili sauce.
