Delightful bite-sized golden bags filled with seasoned chicken and creamy cheese, perfect for any gathering.
Ingredients

- 300g boneless, skinless chicken thigh, cut into small pieces
- 4 cloves garlic, minced
- 1/4 tsp white peppercorns
- 1/4 tsp black peppercorns
- 1 1/2 tsp coriander seeds
- 2 tsp fish sauce
- 1 Tbsp soy sauce
- 1 tsp sugar
- 1 egg
- 2 tsp cornstarch or tapioca starch
- 40 pieces of goat cheese, in 1/4-inch cubes
- 10 sheets 8-inch spring roll wrappers
- Oil for frying
- Sriracha or sweet chili dipping sauce for serving
Instructions
- Toast spices in a small dry sauté pan over medium-high heat for 2-3 minutes until aromatic.
- Freeze the cubes of goat cheese in the freezer to firm them up.
- Prepare a spice paste by grinding the white and black peppercorns and toasted coriander seeds in a mortar and pestle.
- Make the filling by blending chicken, spice paste, egg, cornstarch, fish sauce, soy sauce, and sugar in a food processor.
- Cut each spring roll wrapper into four quarters.
- Fill each wrapper with a portion of chicken filling and a piece of frozen cheese.
- Shape the bags by gathering the corners of the wrapper and pinching in the middle.
- Heat oil in a pot or wok to 350°F (175°C).
- Fry the bags for 1 to 1.5 minutes until golden and crispy.
- Drain on a rack or paper towel and serve hot with sauce.
Notes
For a twist, add herbs or substitute the cheese with your preference. Store leftovers in an airtight container for up to 3 days.
