Description

Ingredients

  • 4 large Russet or Yukon Gold potatoes
  • 2 tablespoons olive oil or melted butter
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)

Instructions

  1. Preheat your oven to 425F (220C).
  2. Line a baking sheet with parchment paper or lightly grease with oil.
  3. Wash and slice the potatoes into even 1/4 inch thick rounds.
  4. Soak the slices in cold water for 15 to 30 minutes.
  5. Drain and dry the slices thoroughly with a towel.
  6. Toss with olive oil, salt, pepper, and garlic powder until evenly coated.
  7. Spread the slices on the baking sheet in a single layer.
  8. Bake for 20 to 25 minutes, flipping halfway through.
  9. Remove from oven, sprinkle cheese over each slice.
  10. Broil on high for 1 to 3 minutes until cheese is melted and bubbly.
  11. Garnish with toppings and serve immediately.

Notes

Store leftovers in an airtight container for up to 2 days in the fridge. Reheat in the oven for best crispiness.
