- 4 large Russet or Yukon Gold potatoes
- 2 tablespoons olive oil or melted butter
- 1 cup shredded cheese (cheddar, mozzarella, or a mix)

- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder (optional)
Instructions
- Preheat your oven to 425F (220C).
- Line a baking sheet with parchment paper or lightly grease with oil.
- Wash and slice the potatoes into even 1/4 inch thick rounds.
- Soak the slices in cold water for 15 to 30 minutes.
- Drain and dry the slices thoroughly with a towel.
- Toss with olive oil, salt, pepper, and garlic powder until evenly coated.
- Spread the slices on the baking sheet in a single layer.
- Bake for 20 to 25 minutes, flipping halfway through.
- Remove from oven, sprinkle cheese over each slice.
- Broil on high for 1 to 3 minutes until cheese is melted and bubbly.
- Garnish with toppings and serve immediately.
