- 4 cod fillets (approximately 1.5 pounds total)
- Salt and pepper to taste
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley (finely chopped)
- 1 lemon (zested and juiced)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon paprika
- 2 tablespoons olive oil
- Cooking spray or extra olive oil for greasing
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper, greasing it with cooking spray or olive oil.
- Pat the cod fillets dry with paper towels and season them with salt and pepper.
- In a shallow bowl, mix panko breadcrumbs, Parmesan cheese, chopped parsley, lemon zest, garlic powder, onion powder, and paprika. Add olive oil and toss until crumbly.
- Press each cod fillet into the breadcrumb mixture, ensuring it’s evenly coated.
- Place the coated fillets on the prepared baking sheet and bake for 15-20 minutes, until the cod flakes easily and the coating is golden brown.
- Remove from the oven and squeeze fresh lemon juice over the top before serving.
Notes
For extra crispiness, broil the fish for the last minute of cooking. Leftovers can be stored in an airtight container for up to 2 days.
