- 1 tablespoon onion powder
- 1 tablespoon smoked or sweet paprika
- 1 tablespoon dry mustard (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with aluminum foil or parchment paper.
- In a small mixing bowl, combine garlic powder, onion powder, paprika, sea salt, and black pepper.
- Stir in the olive oil to form a paste and coat the chicken drumsticks.
- Let the chicken legs come to room temperature and pat them dry with paper towels.
- Using a brush or your hands, coat each drumstick thoroughly with the spice mixture.
- Arrange the chicken legs on the lined baking sheet in a single layer.
- Bake for 30 minutes on the middle rack, then brush with oil from the tray and bake for an additional 5-10 minutes until crispy and internal temperature reaches 165°F (74°C).
- Let the chicken rest for a few minutes before serving.

For extra crispiness, try air-drying the chicken legs in the fridge for a few hours before baking.
