- 4 boneless, skinless chicken breasts
- 1 cup white wine (Sauvignon Blanc or Chardonnay)
- 1 cup heavy cream
- 2 cups mushrooms, sliced
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt and pepper on both sides. Cook until golden brown on both sides, about 6-7 minutes per side. Remove from skillet and set aside.
- In the same skillet, add sliced mushrooms and cook until browned and tender, about 5 minutes. Add minced garlic and sauté for one more minute.
- Pour in white wine, scraping up any bits stuck to the pan. Let it simmer for 3-5 minutes until reduced slightly.
- Stir in heavy cream and simmer until the sauce thickens, about 5 minutes. Adjust seasoning with salt and pepper as needed.
- Return chicken to the skillet, ensuring it’s well-coated with the sauce. Cook for an additional 2-3 minutes to heat through.
- Serve with a garnish of fresh parsley.
Notes
For best results, let chicken come to room temperature before cooking. You can make the chicken and sauce ahead of time and reheat before serving.
