- 1 can chickpeas, drained and rinsed
- 2 cups mixed vegetables (bell peppers, zucchini, spinach)
- 1 cup vegetable broth
- 1 cup cream or coconut cream
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Herbs of choice (thyme or oregano)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine chickpeas, mixed vegetables, garlic powder, salt, and pepper.
- Heat the vegetable broth in a pot over medium heat. Stir in the cream (or coconut cream) until uniform.
- Pour the broth mixture over the chickpea and vegetable mix. Stir until well coated.
- Transfer the mixture to a baking dish and cover with aluminum foil.
- Bake for 25-30 minutes, until vegetables are tender.
- Remove the foil and bake for an additional 10-15 minutes for a slightly crispy top.
- Serve warm and enjoy!
