Description

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 cups mixed vegetables (bell peppers, zucchini, spinach)
  • 1 cup vegetable broth
  • 1 cup cream or coconut cream
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Herbs of choice (thyme or oregano)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine chickpeas, mixed vegetables, garlic powder, salt, and pepper.
  3. Heat the vegetable broth in a pot over medium heat. Stir in the cream (or coconut cream) until uniform.
  4. Pour the broth mixture over the chickpea and vegetable mix. Stir until well coated.
  5. Transfer the mixture to a baking dish and cover with aluminum foil.
  6. Bake for 25-30 minutes, until vegetables are tender.
  7. Remove the foil and bake for an additional 10-15 minutes for a slightly crispy top.
  8. Serve warm and enjoy!
