- 1 pound Italian sausage, ground

- 1/2 cup sun-dried tomatoes, chopped
- 1 cup chicken broth

- 1/2 teaspoon red pepper flakes
- 2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 cups baby spinach
- Salt and pepper to taste
- Fresh basil leaves, torn, for garnish
Instructions
- Cook the penne pasta according to the package directions; reserve 1 cup of pasta water before draining.
- In a large skillet, heat olive oil and brown the Italian sausage.
- Add minced garlic and sauté until fragrant, then stir in sun-dried tomatoes, chicken broth, Italian seasoning, and red pepper flakes; simmer for 3-5 minutes.
- Stir in heavy cream and let the sauce thicken.
- Add Parmesan cheese, cooked sausage, and spinach; cook until spinach wilts.
- Toss the cooked penne with the sauce, adding reserved pasta water to reach the desired consistency.
- Serve hot, garnished with fresh basil and additional Parmesan cheese.
