- 4 boneless skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 cup sun-dried tomatoes (oil-packed)
- 1 cup heavy cream
- 4 cups fresh baby spinach
- 1 cup grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- 2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the chicken for 5-7 minutes on each side until golden brown and cooked through.
- Remove the chicken and set aside on a plate.
- Add minced garlic and sun-dried tomatoes to the skillet, sauté for 1 minute.
- Pour in heavy cream and sprinkle in Italian seasoning; simmer for 3-5 minutes until thickened.
- Stir in spinach and Parmesan until melted and combined.
- Return the chicken to the skillet, ensuring it is coated in sauce.
- Serve over pasta or rice with extra sauce draped on top.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. To keep the sauce creamy upon reheating, do so gently.
