Description
A rich and creamy Tuscan-inspired dip packed with sun-dried tomatoes, spinach, garlic, and Italian herbs. Perfect for parties, game days, or as a flavorful spread for bread and crackers.
Ingredients
Scale
- 8 oz (225g) cream cheese, softened
- 1/2 cup (120ml) mayonnaise
- 1/2 cup (120ml) sour cream
- 1 cup (40g) fresh spinach, finely chopped
- 1/3 cup (50g) sun-dried tomatoes, finely chopped
- 1/4 cup (25g) grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- 1/4 cup (60ml) heavy cream (optional, for thinner consistency)
Instructions
- In a large mixing bowl, combine cream cheese, mayonnaise, and sour cream. Mix until smooth.
- Add chopped spinach, sun-dried tomatoes, Parmesan cheese, minced garlic, Italian seasoning, red pepper flakes (if using), salt, and black pepper. Stir well.
- For a creamier texture, slowly mix in heavy cream until desired consistency is reached.
- Cover and refrigerate for at least 1 hour to allow flavors to meld.
- Before serving, give it a final stir and garnish with extra sun-dried tomatoes or fresh herbs if desired.
- Serve with toasted bread, crackers, or fresh vegetables.
Notes
- For a lighter version, substitute Greek yogurt for sour cream.
- Can be made a day ahead—flavors develop more over time.
- If using oil-packed sun-dried tomatoes, pat them dry before chopping.
- Add cooked, crumbled bacon for extra flavor (not vegetarian).
