- 2 large boneless, skinless chicken breasts
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup orzo pasta
- ½ cup sun-dried tomatoes, chopped
- 2 cups chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- ½ tsp red pepper flakes (optional)
- 1 tbsp butter
Instructions
- Season chicken with salt, pepper, garlic powder, and Italian seasoning.
- Sear chicken in a skillet with olive oil over medium-high heat for 5–6 minutes per side; remove from skillet.
- Sauté minced garlic with butter in the same skillet for about 30 seconds.
- Toast orzo in the skillet for 1–2 minutes until fragrant.
- Add sun-dried tomatoes and chicken broth; simmer for 10 minutes until orzo is al dente.
- Stir in heavy cream and Parmesan cheese until smooth.
- Add spinach and stir until just wilted.
- Return sliced chicken to the skillet and simmer for an additional 2 minutes. Serve immediately.
Notes
This dish can be customized with different vegetables and proteins. Leftovers keep well in the fridge for 3–4 days.
