Description

A heartwarming one-pot meal combining juicy chicken, creamy orzo, sun-dried tomatoes, and vibrant spinach, perfect for family dinners or cozy evenings.


Ingredients

  • 2 large boneless, skinless chicken breasts
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup orzo pasta
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • ½ tsp red pepper flakes (optional)
  • 1 tbsp butter

Instructions

  1. Season chicken with salt, pepper, garlic powder, and Italian seasoning.
  2. Sear chicken in a skillet with olive oil over medium-high heat for 5–6 minutes per side; remove from skillet.
  3. Sauté minced garlic with butter in the same skillet for about 30 seconds.
  4. Toast orzo in the skillet for 1–2 minutes until fragrant.
  5. Add sun-dried tomatoes and chicken broth; simmer for 10 minutes until orzo is al dente.
  6. Stir in heavy cream and Parmesan cheese until smooth.
  7. Add spinach and stir until just wilted.
  8. Return sliced chicken to the skillet and simmer for an additional 2 minutes. Serve immediately.

Notes

This dish can be customized with different vegetables and proteins. Leftovers keep well in the fridge for 3–4 days.
