- 12 oz penne pasta
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Pasta: In a large pot, bring salted water to a boil. Cook the penne pasta until al dente (about 10-12 minutes). Drain and set aside.
- Sauté the Smoked Sausage: Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned, about 5-7 minutes.
- Add Aromatics: Add diced onion and cook until translucent (3-4 minutes), then add minced garlic and sauté until fragrant (1-2 minutes).
- Create the Sauce: Pour in chicken broth and bring to a simmer. Lower the heat, add heavy cream, Italian seasoning, paprika, salt, and pepper. Cook for 3-4 minutes to thicken.
- Combine Pasta and Sauce: Toss the cooked pasta with the sauce. Adjust thickness with reserved pasta water if necessary.
- Final Touches: Stir in shredded mozzarella cheese until melted.
- Serve It Up: Garnish with fresh parsley and season with salt and pepper before serving.
