- 2 packs of ramen noodles
- 1/4 cup creamy peanut butter
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha (optional)
- 1/2 cup water
- Chopped green onions for garnish
Instructions
- Bring a pot of water to a boil and cook the ramen noodles according to package instructions (3-4 minutes). Drain and set aside.
- In a medium bowl, combine peanut butter, soy sauce, rice vinegar, sriracha (if using), and water. Whisk until smooth.
- In a large pan over medium heat, combine the cooked noodles and peanut sauce.
- Stir constantly for about 2-3 minutes until heated through, adding more water if the mixture is too thick.
- Serve immediately, garnishing with chopped green onions.
Notes
For best results, make sure your peanut butter is at room temperature for easy mixing. Store leftovers in an airtight container in the fridge for up to 2 days.
