- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 8 oz cream cheese, softened
- 1 cup heavy cream
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot over medium heat, add a drizzle of olive oil and sauté the diced onion and minced garlic until softened, about 4-5 minutes.
- Add the shredded chicken and pour in the chicken broth. Stir and bring to a gentle simmer for about 10 minutes.
- Reduce heat to low and add the room-temperature cream cheese in chunks, stirring until fully combined.
- Add the heavy cream and Italian seasoning, mixing well.
- Taste and season with salt and pepper. Heat through for another 3-5 minutes.
- Ladle into bowls and garnish with parsley before serving.
Notes
For a thinner soup, add more chicken broth; for a thicker soup, incorporate more cream cheese.
