Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large pot over medium heat, add a drizzle of olive oil and sauté the diced onion and minced garlic until softened, about 4-5 minutes.
  2. Add the shredded chicken and pour in the chicken broth. Stir and bring to a gentle simmer for about 10 minutes.
  3. Reduce heat to low and add the room-temperature cream cheese in chunks, stirring until fully combined.
  4. Add the heavy cream and Italian seasoning, mixing well.
  5. Taste and season with salt and pepper. Heat through for another 3-5 minutes.
  6. Ladle into bowls and garnish with parsley before serving.

Notes

For a thinner soup, add more chicken broth; for a thicker soup, incorporate more cream cheese.
