- 4 cups chicken or vegetable broth
- 1/4 cup tahini (sesame paste)
- 2 tablespoons soy sauce
- 1 tablespoon miso paste
- 1 tablespoon chili oil
- 1 tablespoon rice vinegar
- 4 servings fresh ramen noodles
- 2 green onions, sliced
- 1/2 cup bean sprouts
- Chopped peanuts
- Soft-boiled eggs
Instructions
- In a large pot, bring the chicken or vegetable broth to a simmer over medium heat.
- In a separate bowl, whisk together tahini, soy sauce, miso, chili oil, and rice vinegar until smooth. If the mixture seems too thick, add a splash of warm broth.
- Add the tahini mixture to the simmering broth, stirring continuously until well combined.
- In another pot, bring salted water to a rolling boil and cook the ramen noodles according to package instructions. Be careful not to overcook.
- Drain the noodles and rinse under cold water to stop the cooking process.
- Divide the cooked noodles among serving bowls and pour the steaming broth over them.
- Garnish with green onions, bean sprouts, chopped peanuts, and a soft-boiled egg cut in half.
