Ingredients

  • 1 lb ground turkey
  • 0.5 tsp salt
  • 2.5 tbsp butter
  • 0.5 onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp flour
  • 1.75 cups chicken broth
  • 0.5 cup milk
  • 3 cups broccoli, chopped
  • 2 cups cheddar cheese, shredded
  • 2 tsp salt
  • 0.5 tsp pepper
  • 0.25 tsp paprika
  • 2 cups rice

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
  2. Finely dice the onion and mince the garlic. Shred the cheddar cheese and chop the broccoli into bite-sized florets.
  3. Heat 2.5 tsp olive oil in a skillet over medium-high heat. Add 1 lb ground turkey and 0.5 tsp salt; cook until no longer pink, about 6-7 minutes.
  4. Transfer turkey to a plate. In the same skillet, melt 2.5 tbsp butter. Add diced onion and a pinch of salt; cook until soft, about 3-4 minutes.
  5. Add minced garlic and cook for 30 seconds, stirring continuously to avoid burning. Sprinkle 2 tbsp flour over the mixture and mix well to create a roux.
  6. Slowly whisk in 1.75 cups chicken broth, then 0.5 cup milk, allowing the sauce to simmer until thickened, approximately 4-5 minutes.
  7. Stir in 3 cups broccoli and simmer until tender-crisp, around 2-3 minutes. Mix in 1 cup cheddar cheese, 2 tsp salt, and 0.5 tsp pepper until everything is melted and smooth.
  8. Fold in the cooked turkey. Combine rice and sauce mixture in the prepared baking dish, and top with the remaining cheddar cheese.
  9. Cover with foil and bake for 20 minutes, then uncover and bake for an additional 5-10 minutes until the cheese is golden and bubbly.
  10. Let rest for 2-3 minutes before serving.
