- 3 cups broccoli, chopped
- 2 cups cheddar cheese, shredded

Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
- Finely dice the onion and mince the garlic. Shred the cheddar cheese and chop the broccoli into bite-sized florets.
- Heat 2.5 tsp olive oil in a skillet over medium-high heat. Add 1 lb ground turkey and 0.5 tsp salt; cook until no longer pink, about 6-7 minutes.
- Transfer turkey to a plate. In the same skillet, melt 2.5 tbsp butter. Add diced onion and a pinch of salt; cook until soft, about 3-4 minutes.
- Add minced garlic and cook for 30 seconds, stirring continuously to avoid burning. Sprinkle 2 tbsp flour over the mixture and mix well to create a roux.
- Slowly whisk in 1.75 cups chicken broth, then 0.5 cup milk, allowing the sauce to simmer until thickened, approximately 4-5 minutes.
- Stir in 3 cups broccoli and simmer until tender-crisp, around 2-3 minutes. Mix in 1 cup cheddar cheese, 2 tsp salt, and 0.5 tsp pepper until everything is melted and smooth.
- Fold in the cooked turkey. Combine rice and sauce mixture in the prepared baking dish, and top with the remaining cheddar cheese.
- Cover with foil and bake for 20 minutes, then uncover and bake for an additional 5-10 minutes until the cheese is golden and bubbly.
- Let rest for 2-3 minutes before serving.
