- 2 pounds baby potatoes, washed and halved
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 3 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley, for garnish
- Juice of half a lemon
Instructions
- Preheat your oven to 400°F (200°C).
- Arrange the halved baby potatoes on a baking sheet and drizzle them with olive oil. Season with salt and black pepper, then toss until coated.
- Roast the potatoes for 25-30 minutes until golden brown and tender, stirring halfway through.
- While the potatoes are roasting, melt the butter in a saucepan over medium heat. Add the garlic and sauté for 1-2 minutes until fragrant.
- Reduce heat to low, stir in the heavy cream and lemon juice, and simmer gently.
- Add the grated Parmesan cheese, stirring until melted and smooth, then adjust seasoning as needed.
- Once the potatoes are roasted, transfer them to a serving dish and pour the creamy garlic sauce over them.
- Garnish with chopped parsley and serve immediately.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently in the microwave or oven.
