- 1 lb (450 g) baby potatoes, washed and halved
- 2 tablespoons extra virgin olive oil
- 1 tablespoon unsalted butter
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the halved baby potatoes with olive oil, and season generously with salt and pepper.
- Spread the halved potatoes in a single layer on a parchment-lined baking sheet. Roast in the preheated oven for 25-30 minutes, flipping halfway through.
- While the potatoes roast, melt butter in a skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in heavy cream and bring to a gentle simmer, cooking for 3-4 minutes until the sauce thickens slightly.
- Remove from heat and stir in grated Parmesan cheese until melted and smooth.
- Transfer the roasted potatoes to a serving dish, pour the creamy garlic sauce over them, and garnish with chopped fresh parsley.
Notes
For a vegan option, substitute heavy cream with coconut cream and omit cheese or use nutritional yeast.
