Description

Creamy Garlic Baby Potatoes are a comforting side dish enveloped in a rich garlic sauce, perfect for any occasion.


Ingredients

  • 1 lb (450 g) baby potatoes, washed and halved
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the halved baby potatoes with olive oil, and season generously with salt and pepper.
  3. Spread the halved potatoes in a single layer on a parchment-lined baking sheet. Roast in the preheated oven for 25-30 minutes, flipping halfway through.
  4. While the potatoes roast, melt butter in a skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Stir in heavy cream and bring to a gentle simmer, cooking for 3-4 minutes until the sauce thickens slightly.
  6. Remove from heat and stir in grated Parmesan cheese until melted and smooth.
  7. Transfer the roasted potatoes to a serving dish, pour the creamy garlic sauce over them, and garnish with chopped fresh parsley.

Notes

For a vegan option, substitute heavy cream with coconut cream and omit cheese or use nutritional yeast.
