Ingredients

- 1 cup feta cheese
- 1 cup cream cheese
- 1/4 cup roasted red peppers, chopped
- 2 tablespoons fresh lemon juice
- 2 tablespoons extra virgin olive oil
- 1 clove garlic, minced
- 1 tablespoon fresh herbs (parsley or dill)
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine the feta cheese and cream cheese. Blend until smooth, about 2-3 minutes.
- Add the chopped roasted red peppers, lemon juice, olive oil, and minced garlic. Stir until mixed, about 2 minutes.
- Fold in the fresh herbs and season with salt and pepper. Transfer to a serving dish and garnish if desired.
Notes
Allow cream cheese to warm to room temperature for easier mixing. This dip can be made up to 2 days in advance.
