Description

A comforting culinary creation that combines pan-seared chicken cutlets with a luscious Dijon mustard cream sauce, perfect for family gatherings and date nights.


Ingredients

  • 2 large boneless, skinless chicken breasts (filleted into 4 cutlets)
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and freshly cracked black pepper (to taste)
  • 1 tbsp olive oil
  • 1 tbsp butter (room temperature)
  • 2 garlic cloves, minced
  • ¾ cup chicken broth
  • 1½ tbsp Dijon mustard
  • 1 tsp Worcestershire sauce (optional)
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 2 cups fresh spinach (or any other greens)

Instructions

  1. In a small bowl, mix together Italian seasoning, garlic powder, onion powder, salt, and pepper. Season both sides of the chicken cutlets evenly with this mixture.
  2. Heat olive oil in a large skillet over medium heat. Once hot, add the chicken cutlets and sear for 4–5 minutes per side until golden brown. Remove the chicken from the skillet and set aside.
  3. Lower the heat to medium-low. In the same skillet, add butter and minced garlic. Sauté for about 1 minute until fragrant.
  4. Pour in the chicken broth, Dijon mustard, and Worcestershire sauce. Stir and scrape up the browned bits from the bottom.
  5. Stir in the heavy cream and Parmesan cheese. Let the sauce simmer for about 5 minutes until it thickens slightly.
  6. Toss in the spinach and stir until just wilted.
  7. Return the chicken to the skillet and spoon the sauce generously over the top. Allow to heat through for 2-3 minutes.
  8. Serve hot with your favorite side dishes.

Notes

For a richer flavor, add a splash of white wine while making the sauce before you add the broth.
