A comforting culinary creation that combines pan-seared chicken cutlets with a luscious Dijon mustard cream sauce, perfect for family gatherings and date nights.

- 2 large boneless, skinless chicken breasts (filleted into 4 cutlets)
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and freshly cracked black pepper (to taste)
- 1 tbsp olive oil
- 1 tbsp butter (room temperature)
- 2 garlic cloves, minced
- ¾ cup chicken broth
- 1½ tbsp Dijon mustard
- 1 tsp Worcestershire sauce (optional)
- ½ cup heavy cream
- ¼ cup grated Parmesan cheese
- 2 cups fresh spinach (or any other greens)
Instructions
- In a small bowl, mix together Italian seasoning, garlic powder, onion powder, salt, and pepper. Season both sides of the chicken cutlets evenly with this mixture.
- Heat olive oil in a large skillet over medium heat. Once hot, add the chicken cutlets and sear for 4–5 minutes per side until golden brown. Remove the chicken from the skillet and set aside.
- Lower the heat to medium-low. In the same skillet, add butter and minced garlic. Sauté for about 1 minute until fragrant.
- Pour in the chicken broth, Dijon mustard, and Worcestershire sauce. Stir and scrape up the browned bits from the bottom.
- Stir in the heavy cream and Parmesan cheese. Let the sauce simmer for about 5 minutes until it thickens slightly.
- Toss in the spinach and stir until just wilted.
- Return the chicken to the skillet and spoon the sauce generously over the top. Allow to heat through for 2-3 minutes.
- Serve hot with your favorite side dishes.
Notes
For a richer flavor, add a splash of white wine while making the sauce before you add the broth.
