- 2 cups orzo pasta
- 1 lb cooked chicken, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup peas
- 1 onion, chopped
- 2 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped onion, 1 cup diced carrots, and 1 cup diced celery. Sauté for about 5-7 minutes until the vegetables are soft and fragrant.
- Stir in 1 lb of cooked, diced chicken, 1 teaspoon garlic powder, 1 teaspoon thyme, and season with salt and pepper to taste. Cook for another 2-3 minutes, allowing the flavors to meld.
- Pour in 2 cups of chicken broth and bring the mixture to a boil.
- Add 2 cups of orzo pasta to the boiling broth. Cook according to package instructions (about 8-10 minutes) until al dente.
- Once the orzo is cooked, stir in 1 cup of frozen peas and 1 cup of heavy cream. Lower the heat and let the mixture simmer for an additional 5 minutes or until the sauce thickens.
- If you desire an extra cheesy finish, stir in 1 cup of shredded cheese until melted and bubbly.
