- 1 tablespoon olive oil
- 1 pound chicken breast, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 1 can diced tomatoes
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced chicken and cook until browned on all sides, about 5-7 minutes.
- Stir in the chopped onion, minced garlic, chopped bell pepper, and chopped celery. Sauté until softened, about 4-5 minutes.
- Stir in the diced tomatoes, chicken broth, and Cajun seasoning, bringing to a boil.
- Reduce heat and let the soup simmer for about 20 minutes.
- Add the heavy cream and season with salt and pepper to taste. Cook for an additional 5 minutes, stirring gently.
- Remove from heat and serve hot, garnished with chopped green onions.
Notes
For a lighter version, replace heavy cream with coconut milk. This soup tastes even better the next day!
