Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced chicken and cook until browned on all sides, about 5-7 minutes.
  3. Stir in the chopped onion, minced garlic, chopped bell pepper, and chopped celery. Sauté until softened, about 4-5 minutes.
  4. Stir in the diced tomatoes, chicken broth, and Cajun seasoning, bringing to a boil.
  5. Reduce heat and let the soup simmer for about 20 minutes.
  6. Add the heavy cream and season with salt and pepper to taste. Cook for an additional 5 minutes, stirring gently.
  7. Remove from heat and serve hot, garnished with chopped green onions.

Notes

For a lighter version, replace heavy cream with coconut milk. This soup tastes even better the next day!
